| Beef offal (small intestine, etc.) | 300-400g |
| Cabbage | 1/4 head (roughly chopped) |
| Garlic chives (nira) | 1 bunch (cut into 5cm pieces) |
| Firm tofu | 1 block (cubed) |
| Garlic | 2 cloves (sliced) |
| Dried red chili pepper | 1 (sliced into rings) |

| Chicken stock powder | 1 tbsp |
| Soy sauce | 3 tbsp |
| Mirin | 2 tbsp |

Parboil the offal in boiling water for . Drain in a colander and rinse with water to remove excess fat and odor.

Add the soup ingredients (water, chicken stock powder, soy sauce, mirin, sake) to a pot and bring to heat. Add the offal, cabbage, and tofu, then simmer on medium heat for .

Top with garlic chives, garlic slices, and red chili pepper. Cook briefly and serve.
Notes & Tips
For a finishing touch, add champon noodles or rice to the remaining broth. Using fresh offal will result in less odor.
