| Dashi stock | 500ml |
| Soy sauce | 1.5 tbsp |
| Mirin | 1 tbsp |

Add dashi to a pot and bring to heat. Add pork, onion, and carrot. Simmer on medium heat for about .

Dissolve the curry roux, then add soy sauce and mirin to season. If the soup needs more thickness, adjust with potato starch dissolved in water.

In a separate pot, boil the himokawa udon according to package directions. Drain in a colander.

Place udon in a bowl, pour the curry soup over, and top with green onion.
Notes & Tips
You can substitute curry roux with curry powder (1 tbsp) + potato starch (2 tsp). A lighter, Japanese-style curry flavor pairs well with the noodles.
