Fried Oysters (Kaki Fry) with Frozen Oysters

| Frozen oysters | 200-300g (8-10 pieces) |
| Salt | a pinch |
| All-purpose flour | as needed |
| Egg | 1 |
| Panko breadcrumbs | as needed |
| Frying oil | as needed |

Place frozen oysters in a colander, set over a bowl of water, and run a gentle stream of water over them for until half-thawed. Do not fully thaw, as this releases too much moisture.

Sprinkle lightly with salt and gently massage to clean. Rinse briefly with water. Pat thoroughly dry with paper towels — this step is the key to a crispy finish.

Lightly coat with flour, dip in beaten egg, then press panko breadcrumbs firmly onto the surface.

Heat oil to 170-180°C (340-360°F). Fry the oysters for until golden brown. Remove and drain on a wire rack.
Notes & Tips
Half-thawing under running water is key. Fully thawing releases too much moisture and results in a soggy finish. Thoroughly drying the oysters ensures a crispy crust.
